BBW by Tie Fun Wan offers hearty comfort food like chicken and waffles, massive burgers and creme brulee waffles

Craving hearty, unpretentious comfort food? Few do it better than BBW by Tie Fun Wan in Kovanan all-day restaurant specializing in burgers, beers, and waffles (hence the name BBW — burger, Beerand Waffle).

Renamed from Fun Wan tie, a Chinese rice bowl concept, BBW is now run by a hotel sous-chef turned chef-owner Chef Ken Chia and pastry chef Francois Wang (who co-founded the now defunct Non Entree Desserts – you can also try his plated desserts at 51 Tras in Tanjong Pagar).

Nestled in the JForte Sportainment Centre, the restaurant presents itself as carrying a “sweet and salty, big, bold, brash, loud, rebellious, irreverent and a coming-of-age vibe with a hearty international Asian menu“.

Burgers make up the bulk of the savory menu, with the signature Messy Burger (S$20)a complimentary combination of wagyu beef patty, cheddar cheese, pickles, lettuce, tomato, mushroom stew and a sunny side up on brioche buns, taking center stage.

You can also find a selection of fried chicken burgers inspired by flavors from Asia, such as Thai style Sawasdee (S$16)which includes Thai-style fried chicken and green chili tartare, and the Korean-style spicy An Nyeong Ha Seyo (S$16) burger with burger gochujang.

We tried one of the newer additions to the ever-growing menu, the Pork burger (S$16), ground pork patties topped with pineapple barbecue sauce with caramelized onions, lettuce, tomato and pickle on brioche buns, served with curly fries. It was the perfect embodiment of the phrase “sweet-salty”, very appropriate for a brand like BBW.

A similar concept applies to the selection of savory waffles with fried chickenwhich is inspired by the same four Asian countries – Thailand, Japan, Singapore and Korea.

We decided to go with the Singapore style (S$14)fried chicken with juicy and tender shrimp paste (har cheong gai) and waffles served with maple syrup and spicy mayo. And what a great decision it was! The waffles here were on another level, crispy and fluffy with an indescribable lightness, perfectly complementing the indulgent fried chicken.

A meal at BBW would be incomplete without a few sidesall of which are priced at $9. Highlights include the Pork Fries with Thai Basil, Oyster tempura with spicy mayonnaiseand addiction Chicken skin with curry mayonnaise.

We went for the modest Pork Meatballs with Salted Egg Sauce (S$9)tender yet meaty, coated in a thick, umami, slightly sweet salty egg yolk sauce that I couldn’t get enough of.

Desserts like sweet waffles, mud pies and milkshakes conceptualized by Chef Francis are, as always, fun and interactive. The Creme Brulee Waffle (S$11.90) features freshly baked waffles topped with pastry cream and a layer of sugar, which is then seared until crispy and caramelized.

All sweet waffles are topped with a scoop of ice cream (S$4 per scoop à la carte) and we opted for (a very average) Pistachiowhich unfortunately lacked that full-bodied nuttiness that I deem necessary for anything pistachio.

In hindsight, Baileys Cafe, Milk chocolate whiskeyor even Dark chocolate ice cream would have worked much better.

The Tiramisu Waffle (S$12.90) — waffles topped with tiramisu foam containing mascarpone cheese, rum and coffee, sprinkled with cocoa powder and finished with a scoop of ice cream, is also remarkable.

Alternatively, if you’re in the mood for mud pie, the Baileys & Nanyang Coffee Mud Pie (S$10.90) and Hokkaido Honeycomb Milk Mud Pie (S$8.90) are crowd favorites.

What’s dinner without a good ol’ milkshake or two? You can choose from tried and true flavors like Lotus Biscotti (S$8.90), Salted Caramel Popcorn (S$9.80)and Old Fashioned Vanilla (S$8.90)but naturally, I had my eye on Caramel Whiskey (S$10.90)the only alcoholic milkshake on the menu, since the beginning.

Unlike some other milkshakes I’ve had in the past, which tend to hit you with a cloying sweetness on the first sip, this surprisingly wasn’t overdone. It was creamy and a bit boozy, reminiscent of Baileys Irish Cream – quite pleasant, even for me (I don’t have a huge sweet tooth).

In other words, Chef Francis’ milkshakes aren’t just made for the gram; they are actually drinkable.
